Quick Quinoa Salad


This is a great quick salad to take to a pot luck.  I'm sure you have a few fall cookouts lined up!  And it really couldn't be simpler.  Quinoa, feta, apple, olives, honey, lemon and mint.  That's it!
1 cup quinoa (I used tri color, but you could use black or red - I would stay away from white because it has a softer texture)
1 apple (Gala or Cripps Pink are great for this)
1/2 cup hard feta
1/2 cup pitted sliced olives (I used Kalamata but think the big Spanish green olives would have been better - or if you don't like olives just leave them out!)
2 lemons
1 to 2 tsp honey
1/4 cup mint

Cook the quinoa according to the package directions.  Make sure to rinse it before you cook it, even if the package or the bulk bin you got it out of says that it has been rinsed.

While the quinoa is cooking slice the apple, leave the skin on, and feta into similarly sized pieces.  Pit and slice the olives.  Chop the mint and set it aside.  Mix the juice from the lemons and the honey.

When the quinoa is cooked and has cooled toss it with the apple, feta and olives.  Dress with the lemon juice and honey.  Give it a taste.  Add some flaked sea salt if you wish.  Sprinkle the mint over the top and voila!
